Sweet and Spicy Chicken Salad
This is a simple sweet and spicy chicken salad recipe for those looking to watch their carb intake but still enjoy their food while eating healthy. I created this salad with the items I had left in my fridge. I hope you enjoy it!
Ingredients You’ll Need
4 oz of chicken breast
1 1/2 cups of romaine lettuce
1/4 cup of cucumbers
1 tbsp of goat cheese
10 green olives
1 tbsp of feta cheese salad dressing
1 packets of Sazon Goya seasoning
1 tbsp of mayo
1 tbsp of water
1 tsp of sriracha
1 tsp of paprika
1/2 tsp of stevia
Instructions
Sazon Goya Sauce
Mix ½ to 1 packet of Sazon Goya Seasoning. You can purchase the individual packets and measure how much you want to use out of the packet. Add the mayo, sriracha, stevia, and paprika.
Chicken Preparation
You can buy pre-grilled chicken breast. At your local grocery store or you can cook your chicken breast.
Preheat a grill pan on medium high and add an oil or non stick spray oil of your choice. Mallet your breast to help tenderize your chicken for about 1 minute or two. Place chicken breast into pan. Allow the chicken to cook for about 4 minutes on each side until golden brown on both sides. Shred the chicken apart making pieces of chicken breast and turn the eye on low.
1. Add the Sazon Sauce to the cooked chicken pieces while in the pan. Allow the Sauce to blend into the chicken causing the chicken to be saturated in the sauce.
2. Add 1 to 1 ½ tbsp of water to help make the chicken and sauce creamy and to avoid drying out the mix. Turn off the stove and let the chicken and sauce marinate together.
3. Grab a bowl and add the vegetable ingredients: chopped romaine lettuce, cucumbers, olives, and pepper’s if your looking for some more spice. Mix together.
4. Place Sazon chicken on top of salad with goat cheese
5. Add Greek dressing and sriracha on top.
